Of course, though they’re more bullponies than cowponies.  Rather than getting curves an udders, they tend to gain height and muscle mass, as well as the typical bovine features like horns, tail, etc.

If a male wanted to become a female cowpony, there would have to be an extra step or a mixture of events that lead to it, as the typical means of becoming a cowpone wouldn’t result in a gender change.

And before someone asks, they’re not minotaurs.  There are several major differences between the two.
